Draft: Update to kernel 6.6 and ubuntu 24.04

Updates the kernel shipped with the image to be a 6.6 variant instead of 6.1 Updates the console environment to ubuntu 24.04 from 23.04

There are a lot of changes to the default kernel configuration and uboot configuration that I don't know how to decide are good or not. Either way I figure this is a good starting point for this update/for interested parties to have a peak at.
